Strawberry Guacamole

​This isn’t your average guacamole! Sweet strawberries pair beautifully with creamy avocado for a refreshing twist that’s perfect for summer snacking, parties, or as a colorful appetizer. The balance of sweet, tangy, and savory flavors will surprise and delight your guests.

Strawberry Guacamole

Ingredients:3 ripe avocados
1 lime, juiced
1 small red onion, finely diced (about ¼ cup)
1 small jalapeño, seeded and finely diced (optional, for heat)
2 tablespoons fresh cilantro, chopped
1 cup fresh strawberries, diced (reserve a small handful for garnish)
​Salt and pepper, to taste

For serving:
  • Fresh cucumber slices
  • Carrot sticks
  • Tortilla chips or veggie dippers of choice

Instructions
  1. Prep the avocados:
    Slice the avocados in half, remove the pits, and scoop the flesh into a medium mixing bowl. Mash with a fork until smooth but still a little chunky.
  2. Add the flavor:
    Stir in lime juice, red onion, jalapeño (if using), and cilantro. Mix until well combined.
  3. Fold in strawberries:
    Gently fold in about ¾ cup of the diced strawberries, reserving the rest for topping.
  4. Season:
    Add salt and pepper to taste. Adjust lime juice if you like it extra tangy.
  5. Garnish & serve:
    Transfer guacamole to a serving bowl. Top with the remaining diced strawberries for a colorful finish. Serve immediately with cucumber rounds, carrot sticks, or tortilla chips.

To help you celebrate, I’m sharing one of my favorite easy and delicious picnic recipes—plus a peek at some of my favorite products that add charm and personality to your Labor Day festivities.

Zesty Chickpea Salad Wraps (Perfect for Picnics!)

These no-fuss wraps are protein-packed, plant-based, and stay fresh on the go. Make them ahead, wrap them up, and enjoy your picnic without worrying about soggy sandwiches or wilted greens.

Ingredients:
1 (15 oz) can chickpeas, drained and rinsed
1/2 cup diced cucumber
1/2 cup chopped red bell pepper
1/4 cup finely chopped red onion
1/4 cup chopped fresh parsley
Juice of 1 lemon
2 tbsp olive oil
1 tsp Dijon mustard
Salt & pepper to taste
4 large whole-grain wraps or tortillas (or corn tortillas for gluten free substitute)
Optional: a few handfuls of spinach or arugula

Instructions:
  1. In a large bowl, mash chickpeas with a fork until chunky.
  2. Add cucumber, bell pepper, onion, and parsley.
  3. In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, salt, and pepper. Pour over chickpea mix.
  4. Toss until combined.
  5. Scoop into wraps and top with greens, if using. Roll up tightly and wrap in parchment paper or foil for easy transport.
