Black & White Hot Chocolate

​This luxurious Black & White Hot Chocolate blends the richness of dark chocolate with the creamy sweetness of white chocolate. Topped with fluffy marshmallows and toasted coconut, it’s a delightful treat for chilly days or festive occasions.

Black & White Hot Chocolate
Yields 2-3 servings

Ingredients:
For the Hot Chocolate:
  • 2 cups whole milk (or your favorite plant milk)
  • 1 cup heavy cream
  • 1/2 cup dark chocolate chips (70% cocoa)
  • 1/2 cup white chocolate chips
  • 2 teaspoons vanilla extract
  • 1 Tablespoon sugar or Monkfruit sweetener (optional, for extra sweetness)

For the Toppings:
  • 1 cup marshmallows
  • 1/4 cup shredded coconut
  • Whipped cream (optional)
  • Caramel topping (optional)
  • Dark chocolate shavings (optional)
Directions:

Toast the Coconut:
Preheat a small skillet over medium heat.
Add the shredded coconut and toast for 2–3 minutes, stirring frequently, until golden brown. Set aside to cool.

Make the Hot Chocolate Base:
In a medium saucepan, combine milk and heavy cream over medium heat. Stir occasionally until it begins to steam, but do not let it boil.

Reduce heat to low and whisk in the dark chocolate chips, white chocolate chips, and vanilla extract. Continue whisking until the chocolate is fully melted and the mixture is smooth. Taste and add sugar if desired.

Prepare the Toppings:
In each serving mug, add a handful of marshmallows.

Assemble the Hot Chocolate:
Pour the hot chocolate into the mugs over the marshmallows. Top with a dollop of whipped cream (if using). Sprinkle the toasted coconut, caramel topping and dark chocolate shavings on top for a festive finish.

Serve and Enjoy:
Serve immediately with a spoon for scooping the melted marshmallows and toppings. Pair with your favorite cookies or biscotti for an extra indulgence!

  • Add a splash of coconut rum for an adult version.
  • Use dairy-free milk and chocolate for a vegan-friendly option.

Green Beans Gremolata RecipeIngredients
Yields approximately 4 servings

Ingredients:
  • 1 lb (450g) fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh dill, finely chopped (optional)
  • 2 tablespoons grated Parmesan cheese (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons toasted pine nuts (optional for garnish)

Directions:
Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until crisp-tender. Drain and immediately plunge them into a bowl of ice water to stop the cooking process. Drain again and set aside.

In a small bowl, mix together the garlic, lemon zest, parsley, and dill (if using).

Heat the olive oil in a large skillet over medium heat. Add the green beans and sauté for 2-3 minutes, until warmed through. Season with salt and pepper.

Remove the skillet from the heat. Add the gremolata mixture to the green beans, tossing until the beans are evenly coated.

If using, sprinkle with grated Parmesan cheese and toasted pine nuts for added flavor and texture.

Transfer to a serving dish and enjoy this vibrant and zesty side dish warm or at room temperature!

Tips:
1. For extra zing, squeeze a little fresh lemon juice over the green beans just before serving.
2. If you prefer your green beans softer, extend the boiling time by 1-2 minutes.

Made with red and green lentils, oats, and a rich medley of vegetables, this recipe is a great way to incorporate healthy whole foods into your meal. Plus, it’s easy to prepare ahead of time, making it an ideal choice for busy holiday schedules. Serve it alongside classic sides like mashed potatoes, roasted vegetables, or a fresh green salad for a wholesome and satisfying meal. Cranberry Glazed Lentil Loaf
Yields approximately 8 servings

Ingredients:
  • 1 tsp coconut oil
  • 1 medium onion finely chopped
  • 2 celery stalks diced
  • 2 carrots shredded
  • 1 tsp dried sage
  • 2 tsp dried thyme
  • 1 cup lentils, soaked and rinsed​
  • 2 1/2 cups water
  • 1/2 cup ground oats
  • 3/4 cup oats
  • ​thyme sprigs for garnish (optional)

Cranberry Glaze:
  • 2 cups cranberries fresh or frozen, divided
  • 1/2 cup orange juice freshly squeezed
  • 2 tbsp balsamic vinegar
  • 1/3 cup maple syrup​

Directions:
Preheat oven to 350°F. In a medium saucepan, heat oil and then saute onion and celery 3 minutes. Add in carrots, sage, thyme, lentils and water. Season with salt & pepper. Simmer for 35 minutes until the lentils are soft. You can prepare the glaze during this time. 

Cranberry Glaze:
In a small saucepan combine 1 2/3 cup cranberries, orange juice, balsamic vinegar and maple syrup and simmer for 15 minutes. The cranberries will pop and the sauce will become thick. 

Once the lentil mixture is done, mix in the oats, ground oats and 1/3 cup cranberries.  Press into a 9-inch loaf pan. Pour cranberry sauce over top.

​Bake for 45 minutes. It will set nicely if you wait for 10 minutes before you cut and serve it.
