Ingredients:
3 ripe avocados
Juice of 1 lime
1 small jalapeño, seeded and finely diced (optional, for spice)
1 small clove garlic, minced
¼ cup red onion, finely diced
¼ cup fresh cilantro, chopped
½ teaspoon salt (adjust to taste)
¼ teaspoon black pepper
3–4 strips cooked bacon, crumbled
¼ cup goat cheese, crumbled
Tortilla chips, for serving
Cook the bacon: Fry or bake until crispy. Drain on paper towels and crumble. Set aside.
Prepare the avocados: Cut the avocados in half, remove the pits, and scoop into a mixing bowl. Mash gently with a fork until chunky-smooth.
Mix in flavors: Stir in lime juice, jalapeño, garlic, onion, cilantro, salt, and pepper. Adjust seasoning to taste.
Add the star ingredients: Fold in most of the crumbled bacon and goat cheese, reserving a little for garnish.
Finish & serve: Transfer to a serving bowl. Sprinkle the top with the reserved bacon, goat cheese, and extra cilantro. Serve immediately with tortilla chips.
- For extra smokiness, add a dash of smoked paprika.
- Substitute queso fresco or feta if you don’t have goat cheese.
- Keep the avocado from browning by pressing plastic wrap directly onto the surface before chilling.
