To help you celebrate, I’m sharing one of my favorite easy and delicious picnic recipes—plus a peek at some of my favorite products that add charm and personality to your Labor Day festivities.
These no-fuss wraps are protein-packed, plant-based, and stay fresh on the go. Make them ahead, wrap them up, and enjoy your picnic without worrying about soggy sandwiches or wilted greens.
Ingredients:
1 (15 oz) can chickpeas, drained and rinsed
1/2 cup diced cucumber
1/2 cup chopped red bell pepper
1/4 cup finely chopped red onion
1/4 cup chopped fresh parsley
Juice of 1 lemon
2 tbsp olive oil
1 tsp Dijon mustard
Salt & pepper to taste
4 large whole-grain wraps or tortillas (or corn tortillas for gluten free substitute)
Optional: a few handfuls of spinach or arugula
- In a large bowl, mash chickpeas with a fork until chunky.
- Add cucumber, bell pepper, onion, and parsley.
- In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, salt, and pepper. Pour over chickpea mix.
- Toss until combined.
- Scoop into wraps and top with greens, if using. Roll up tightly and wrap in parchment paper or foil for easy transport.
