Makes: 18-24 cookies
Ingredients
- 2 cups walnut halves
- 1 cup semi-sweet chocolate chips
- ¼ cup unsweetened cocoa powder
- 2 large eggs
- ⅓ cup sugar (or coconut sugar)
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ½ teaspoon baking powder
- ½ cup chopped walnuts
- Additional walnut halves for garnish
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Place the 2 cups walnuts in a food processor and process until finely ground. The texture should resemble coarse almond flour.
- Add:
- cocoa powder
- sugar
- salt
- baking powder
- Add eggs and vanilla. Process until a thick chocolate batter forms.
- Stir in:
- chocolate chips
- chopped walnuts
- Drop rounded tablespoons of batter onto the prepared baking sheet.
- Press a walnut half onto the top of each cookie.
- Bake for 10-12 minutes, until the tops are set and slightly cracked.
- Let cool on the pan for 5 minutes, then transfer to a wire rack.
