Ingredients:
- 1 cup fresh raspberries (plus extra for garnish)
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- ½ cup honey or sugar (adjust to taste)
- 1 cup water (for the raspberry syrup)
- 3 cups cold sparkling water or club soda
- Ice
- Lemon slices and mint leaves, for garnish
In a small saucepan, combine raspberries, ½ cup honey (or sugar), and 1 cup water. Bring to a simmer over medium heat, stirring occasionally until the raspberries break down (about 5–7 minutes).
Strain through a fine mesh sieve into a bowl or pitcher to remove seeds. Let cool.
Right before serving, stir in the sparkling water or club soda. Add ice and stir gently to combine.
Pour into glasses over ice. Garnish with lemon slices, fresh raspberries, and mint leaves for a festive touch.
- For a fancier twist, use sparkling lemonade or pink sparkling wine instead of club soda.
- Want to prep ahead? Make the raspberry syrup and lemon juice mix a day in advance and keep chilled. Add the sparkling water just before serving.
