Ingredients:3 ripe avocados
1 lime, juiced
1 small red onion, finely diced (about ¼ cup)
1 small jalapeño, seeded and finely diced (optional, for heat)
2 tablespoons fresh cilantro, chopped
1 cup fresh strawberries, diced (reserve a small handful for garnish)
Salt and pepper, to taste
For serving:
- Fresh cucumber slices
- Carrot sticks
- Tortilla chips or veggie dippers of choice
- Prep the avocados:
Slice the avocados in half, remove the pits, and scoop the flesh into a medium mixing bowl. Mash with a fork until smooth but still a little chunky. - Add the flavor:
Stir in lime juice, red onion, jalapeño (if using), and cilantro. Mix until well combined. - Fold in strawberries:
Gently fold in about ¾ cup of the diced strawberries, reserving the rest for topping. - Season:
Add salt and pepper to taste. Adjust lime juice if you like it extra tangy. - Garnish & serve:
Transfer guacamole to a serving bowl. Top with the remaining diced strawberries for a colorful finish. Serve immediately with cucumber rounds, carrot sticks, or tortilla chips.
