Easter is March 31st this year. Did you know that the exact date is the Sunday following the first full moon after the vernal (spring) equinox? Industry-wide, an estimated 40 million Easter cards are exchanged annually, making Easter the fifth largest card-sending holiday in the US. In the past few years (especially since moving to Portugal), I've opted for e-greetings. So this year, I thought I would share some of my designs with you for you to send to your family and friends. Make these Maple Candied Pecans in a matter of minutes for a quick and easy delicious snack. Try a combination of almonds, cashews, and pecans for a unique twist, or go with the tried-and-true pecans. You may eat these nuts on their own, or sprinkle them on salads, ice cream, and more! These candied pecans are vegan and gluten free. They are the perfect toppers for many dishes. You can toss these maple pecans on your ice cream, yogurt, smoothie bowls, pancakes, salads and SO MUCH more! Ingredients: 2 cups pecan halves (or any mixture of raw nuts) 1/4 cup pure maple syrup 1 teaspoon vanilla extract ½ teaspoon sea salt Directions: In a skillet, stir together maple syrup, vanilla and sea salt over medium heat and allow to warm up for 1 minute. Add the nuts and stir constantly to coat. Continue to stir the nuts until all of maple syrup has been absorbed (about 5-7 minutes). Make sure to stir continuously so as not to burn the nuts. You want to cook until all the maple is absorbed and letting the nuts sit in one spot for too long can easily turn into burned nuts! Remove from stove and pour mixed nuts evenly over parchment paper to cool. You can sprinkle cinnamon sugar mixture over if desired for a sugar coated look. Break apart once cooled. Each spring, the cherry blossoms lining Washington DC’s Tidal Basin burst in a beautiful display of floral fireworks – white, light pink, dark pink, yellow and green. The blooms typically come out between the last week of March and the first week of April. That timeframe is usually a good time to aim for if you’re planning on visiting the nation’s capital. Precisely when peak bloom occurs depends on the weather in the weeks and months leading up to it. Warmer, sunnier conditions through the winter and early spring tend to bring an earlier bloom. Sustained cold, wintry weather delays it. The National Cherry Blossom Festival is typically scheduled over 2-3 weeks around the average peak bloom date. The hope is that the blossoms will come out at some point during that period, but it’s unlikely they’ll be out for the duration. I just read that this year’s peak bloom, which only lasts a few days, will probably be March 18-20 as they are already starting to find flowers blooming. So I thought I would take this opportunity to share some of my photos from previous years. They are so beautiful that people want to touch them and sit in their beauty And grab your cameras because you are going to want to take your photo in and amongst the blooms. I wish that I could be there this year to see them because they are truly spectacular. If you haven’t seen them in real life, I highly recommend it.
