Crabby Guacamole

Ingredients:
3 ripe avocados, peeled and mashed
½ cup red onion, finely chopped
¼ cup kalamata olives, chopped
1 cup cherry or grape tomatoes, diced
½ cup queso fresco or feta cheese, crumbled
1 jalapeño, finely chopped (optional, for heat)
Juice of 1 lime
½ teaspoon salt (adjust to taste)
¼ teaspoon black pepper
6–8 oz lump crab meat, picked over for shells

  1. Mash the Avocados
    In a large bowl, mash the avocados until creamy but still a little chunky. Stir in lime juice to keep the avocados from browning.
  2. Mix in Flavor Layers
    Add the red onion and kalamata olives. Stir to combine.
    Mix in the diced tomatoes.
  3. Add Cheese
    Gently fold in the crumbled queso fresco (or feta).
  4. Season

Bacon Goat Cheese Guacamole

Ingredients:
3 ripe avocados
Juice of 1 lime
1 small jalapeño, seeded and finely diced (optional, for spice)
1 small clove garlic, minced
¼ cup red onion, finely diced
¼ cup fresh cilantro, chopped
½ teaspoon salt (adjust to taste)
¼ teaspoon black pepper
3–4 strips cooked bacon, crumbled
¼ cup goat cheese, crumbled
Tortilla chips, for serving

Cook the bacon: Fry or bake until crispy. Drain on paper towels and crumble. Set aside.

Prepare the avocados: Cut the avocados in half, remove the pits, and scoop into a mixing bowl. Mash gently with a fork until chunky-smooth.

Mix in flavors: Stir in lime juice, jalapeño, garlic, onion, cilantro, salt, and pepper. Adjust seasoning to taste.

Add the star ingredients: Fold in most of the crumbled bacon and goat cheese, reserving a little for garnish.

Peach and Fig Salsa

  • 2 ripe peaches, diced
  • 6 fresh figs, diced
  • 1/2 small red onion, finely chopped

In a medium-sized bowl, combine the diced peaches and figs. Make sure the peaches are firm but ripe for the best texture.
