Creamy, nutritious, and naturally delicious, coconut chia pudding with hemp seeds is the perfect make-ahead breakfast or snack. Packed with plant-based protein, omega-3s, and fiber, this simple recipe combines the tropical richness of coconut milk with the nutty crunch of hemp seeds for a satisfying treat. Best of all, it takes just minutes to prepare and can be customized with your favorite toppings—from fresh fruit to a drizzle of raspberry coulis.

Coconut Chia Pudding with Hemp Seeds
(serves 2–3)

Ingredients 
  • 1 can (13.5 oz / 400 ml) full-fat coconut milk (or light if preferred)
  • 3–4 Tbsp chia seeds
  • 1–2 Tbsp hemp seeds (plus extra for topping)
  • 1–2 Tbsp maple syrup or honey (adjust to taste)
  • 1 tsp vanilla extract
  • Pinch of sea salt
Optional Toppings
  • Fresh fruit (berries, mango, banana slices, kiwi)
  • Coconut flakes
  • Granola
  • Extra hemp seeds or chopped nuts

Instructions

Mix the base: In a medium bowl or jar, whisk together coconut milk, chia seeds, hemp seeds, maple syrup, vanilla, and salt until well combined.

Rest & stir: Let the mixture sit for about 10 minutes, then stir again to prevent clumping.

Chill: Cover and refrigerate for at least 2–4 hours (overnight is best) until the pudding thickens.

Serve: Stir before serving, spoon into bowls or jars, and top with your favorite fruits, nuts, or coconut flakes.
Tips:
For extra creaminess, blend the mixture before chilling.
If the pudding is too thick, stir in a splash of almond milk or more coconut milk.
To meal prep, portion into small jars and store in the fridge for up to 4–5 days. 
You can also freeze individual portions and then just take out of freezer and put in refrigerator the night before.

Coulis (pronounced koo-LEE) is a French term that refers to a smooth, thick sauce made by puréeing and straining fruits or vegetables. Traditionally, the word described a rich meat-based sauce that was reduced multiple times, but its meaning has evolved over the years. Today, you’ll most often find two types: savory coulis made from vegetables and sweet coulis created from a wide variety of fruits. Chefs frequently use coulis as a vibrant garnish to elevate both main dishes and desserts.

What do you do with raspberry coulis?

🍰 🍦​Sweet Uses
Cheesecake Topping – Drizzle over classic baked or no-bake cheesecake for a tangy-sweet contrast.
Ice Cream or Gelato – Pour over vanilla, chocolate, or coconut ice cream for a gourmet touch.
Yogurt Parfaits – Layer with granola, yogurt, and fresh fruit for a quick, elegant breakfast.
Chia Pudding - Enjoy chia pudding as a healthy breakfast, a light snack, or a refreshing dessert topped with fresh fruit, nuts, or a drizzle of raspberry coulis.
Cakes & Cupcakes – Use as a filling or drizzle on top of chocolate cake, sponge cake, or cupcakes.
Pancakes & Waffles – Swap out syrup for coulis to brighten up your brunch.

Raspberry Coulis

Ingredients:
2 cups fresh or frozen raspberries
2–3 Tbsp maple syrup or sugar (adjust to taste)
1 Tbsp lemon juice (freshly squeezed)
1–2 Tbsp water (optional, if needed to thin)

Instructions:

Cook the berries: In a small saucepan over medium heat, add raspberries, maple syrup, and lemon juice. Cook for 5–7 minutes, stirring occasionally, until the berries break down and release their juices.

Blend: Remove from heat and puree the mixture with an immersion blender (or transfer to a regular blender).

Strain (optional): For a silky smooth coulis, press the puree through a fine-mesh sieve to remove the seeds. If you prefer it rustic, you can leave the seeds in.

Adjust consistency: If it’s too thick, stir in 1–2 tablespoons of water until it reaches your desired pourable consistency.
Tip:  It can be stored in the refrigerator for 5 days. Or you can freeze in cubes for individual servings.

This dish is simple enough for a weeknight dinner yet impressive enough to serve at a summer gathering — a refreshing twist on classic seafood cakes that will keep everyone coming back for seconds.

Shrimp Cakes with Pineapple Salsa

Ingredients
​For the Shrimp Cakes:
  • 1 lb raw shrimp, peeled and deveined
  • ½ cup gluten free breadcrumbs (panko or regular)
  • 1 egg, lightly beaten
  • ¼ cup red onion, finely diced
  • ½ cup carrots, finely diced
  • 1 garlic clove, minced
  • 2 Tbsp fresh parsley or cilantro, chopped
  • 1 Tbsp lime juice
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp paprika (optional, for a hint of spice)
  • Olive oil, for pan-frying
For the Pineapple Salsa:
  • 2 cups fresh pineapple, diced
  • ½ cup red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño or chili (optional), finely minced
  • Juice of 1 lime
  • Salt and pepper to taste
For Serving:
  • Lime wedges
  • Extra cilantro or parsley

1. Prepare the Salsa:
  1. In a medium bowl, combine pineapple, red onion, cilantro, jalapeño (if using), lime juice, salt, and pepper.
  2. Stir well and set aside to let the flavors meld.

2. Make the Shrimp Cakes:
  1. Place half of the shrimp in a food processor and pulse until finely chopped into a paste.
  2. Roughly chop the remaining shrimp into small chunks for texture.
  3. In a large bowl, mix together shrimp paste, chopped shrimp, breadcrumbs, egg, red onion, carrots, garlic, parsley, lime juice, salt, pepper, and paprika.
  4. Form into small patties (about 2–3 inches wide).
3. Cook the Cakes:
  1. Heat a skillet over medium heat with a drizzle of olive oil.
  2. Cook shrimp cakes for 3–4 minutes per side until golden brown and cooked through.
Serve: Arrange shrimp cakes on a platter, garnish with fresh herbs, and serve with lime wedges. Top with or serve alongside the pineapple salsa.
Tip: These shrimp cakes also pair beautifully with roasted veggies (like these carrots) or a light green salad.
