Caramelized Onion Pie with Herbs de Provence

Similar to a quiche, this Caramelized Onion Pie with Herbs de Provence is ultra-creamy made with caramelized onions, cheese, and a gluten free crust.

This Caramelized Onion Pie with Herbs de Provence is extremely versatile. It's extremely satisfying whether enjoyed for brunch, lunch, or even dinner.

​It can also be great as a make ahead breakfast.
Caramelized Onion Pie with Herbes de Provence 
Yields 8 servings

Ingredients:
prepared gluten free crust
2 Tablespoons butter, extra-virgin olive oil, or a mix
3 onions, peeled and cut into thin slices (I used one each of red, yellow and white)
3 teaspoons sugar
1 Tablespoon water (you may need a bit more)
3 teaspoons dried Herbes de Provence
1/2 cup heavy cream
1/2 cup crème fraîche
3 Eggs
salt and pepper
2 Tablespoons parmesan cheese

Directions:
Place your skillet over medium heat and melt the butter.  Add all the onions to the pan and stir them gently to coat with butter.

Check the onions every 5 to 10 minutes. Stir the onions and scrape up any fond that forms on the bottom of the skillet. Exact cooking times will vary with the number of onions you're cooking, their liquid and sugar content, and their age, but usually 20-40 minutes. 

To prevent onions from drying add, add 1 Tablespoon of water.  I usually add it around the 10-minute mark.  At the same time, I usually at the sugar and stir.

Once onions have reached the desired caramelization, remove from heat.   Add Herbs de Provence, mix together and set aside.

Preheat oven to 375°F (190°C).

In a medium bowl, add heavy cream, créme fraîche, eggs, salt and pepper and combine well.

Layer onions on the bottom of the prepared crust.  Pour cream mixture on top of onions.  Sprinkle top with parmesan cheese.

Place pie on sheet pan and into oven uncovered until pie is golden brown and center is cooked though, about 30-40 minutes.

​Top with parsley.


Cut into 8 slices.

Street Art in Graça Neighborhood of Lisbon

This past Saturday, I did a Street Art Walk in Graça neighborhood with guide Igor Vitorino of The Street Buddha with some friends.

Apparently this mural was done during the height of the pandemic so it was painted without people.

Since moving to Lisbon last May, I've come to really appreciate street art.  Which is good because Lisbon is an open-air gallery.  Not only does it have beautiful tiles on facades of churches and building (which we learned from Igor that people use the tiles to protect the building structures but to also show off) and the traditional cobblestone sidewalks, but also for its street art. Following the April 25, 1974 Revolution, there was an explosion of political murals, and today artistic graffiti is even sponsored by the City Council.
The Portuguese capital is now known as one of the cities with the best street art, and some local artists like Vhils and Bordalo II have works all over the world. Vhils is known for carving faces, while Bordalo II creates art from trash to help bring awareness to endangered species and the harm that pollution is having on them.

This is a Bordalo II (check out more art from Bordalo II) from before is got into trash art.  I believe Igor said it was from 2011. You'll notice that the art also has graffiti.  Igor explained that others will mark it with graffiti as a means of claiming the territory or to show disrespect for artist (such a tragedy defacing such beautiful art).

Shepard Fairey and Portuguese artist Vhils created piece on Rua Senhora da Glória. Fairey painted half of a female face, while Vhils carved the other.

In my attempt to learn more Portuguese vocabulary, I looked up the word "saudade".  It means "an emotional state of melancholic or profoundly nostalgic longing for something or someone that one loves despite it not necessarily being real or they reciprocate it back that is supposedly characteristic of the Portuguese."
Our 90-minute tour ended with this gorgeous view!

Kangaroo Steak with Balsamic Cherries

Love steak, but want something leaner?  Try kangaroo steak, the venison of Australia.  Perfectly cooked kangaroo steak drizzled with balsamic glaze with cherries served on a bed of roasted vegetables and side salad.

Kangaroo Steaks are a new food I tried 2022.  I saw them in my local Lidl and said, "why not?"  I liked to try new foods.
Kangaroo meat is a very healthy source of protein. Kangaroo is a ultra lean meat with less than 2% fat, making it a healthier red meat option. It is also high in protein, essential B vitamins, minerals such as zinc, iron and omega 3 fats and omega 6 fatty acids. It also contains a compound called conjugated linoleic acid, which actively reduces blood pressure.

Kangaroo is a gamey meat, and some even prefer it to lamb and steak for its tenderness and taste.

​It tends to be a stronger flavor than beef or lamb.

Kangaroo Steak with Balsamic Cherries

Ingredients:
kangaroo steaks, at room temperature
olive oil
butter
pepper and salt 

For the balsamic cherries
1/2 cup balsamic vinegar
1 Tablespoon Keto sugar (I used monk fruit sweetener) or regular sugar.
1/4 cup water
1/2 cup cherries, pitted and coarsely chopped
pinch coarse Kosher salt
Directions:
Prepare the balsamic cherries first.  In a small saucepan, combine balsamic vinegar, sugar, cherries and water. Bring to a low simmer.

Simmer for 20-30 minutes, stirring occasionally to prevent burning.

​When sauce has reduced, remove from heat and stir in a pinch of coarse Kosher salt.

Sauce won’t be the texture of syrup yet- it will still be a little runny, that is normal.
Set aside to cool and thicken.

(NOTE:  More than likely you'll have some balsamic cherries leftover.  Store them in airtight container in refrigerator for up to one week.  Perfect to top on salmon or lamb!)

For the kangaroo steaks:
Before cooking the kangaroo steaks, pat dry with paper towel.

Rub the steaks with a little bit of olive oil. Salt and pepper each side.

Add kangaroo steak(s) to a medium frying pan over medium high heat. Cook for 4 minutes then turn them around and cook for another 4 minutes. If you like your meat to be rare, cook these steaks for about 6-7 minutes total.

Add a little bit of butter in the last 3 to 4 minutes of cooking.

Remove the steaks from the pan and let them rest for 2 minutes.  

Serve with roasted vegetables and salad (as pictured).

PACKED WITH SUPERFOODS
This Blueberry Maple Pecan Baked Oatmeal is packed with superfoods!  Superfoods are foods that are rich in compounds that have the power to positively affect our health, ward off disease, and increase longevity.  
  • Oats are packed with fiber. Fiber helps keep things moving along smoothly in our intestinal tract.  A diet high in fiber also helps reduce cholesterol, regulate blood sugar levels, regulate blood pressure, and lower your risk of heart disease.  Since Oatmeal will help you feel full longer, it can help you lose weight.  
  • Blueberries are superfoods too.  They provide vitamin C, fiber, and powerful disease-fighting antioxidants.  
  • Pecans pack a 1-2-3 punch of protein, healthy fats, and fiber that can help keep you energized and satisfied. Pecans are a good source of calcium, magnesium, and potassium, which help lower blood pressure.  
4 servings (1/2 grain, 1/2 protein and 2 oz. of fruit each; suitable for Bright Line Eating program).
Blueberry Maple Pecan Baked Oatmeal

Ingredients:
2 oz. (1/2 cup) oatmeal
2 oz. (1/4 cup) nut milk
2 oz. ricotta cheese
1 egg
1/4 teaspoon baking powder
1/2 teapot cinnamon
pinch of salt
1/2 teaspoon maple extract
4 oz. ripe banana mashed
4 oz. blueberries
1/4 cup chopped pecans + 4 halves
Directions:
Preheat oven to 350°F (175°C).
Spray baking dish with cooking spray.
In medium bowl, combine wet ingredients.
In another bowl, combine oats, baking powder, cinnamon and mix well.
​Mix dry ingredients into wet.  Stir in 3/4 of blueberries and all of the chopped pecans.
Power into prepared baking dish.  Sprinkle with more cinnamon.
Place pecan halves on top of mixture and put remaining blueberries.
​Bake for 30 minutes until firm to touch.

Cut into 4 slices and store in airtight containers in refrigerator for up to one week.  Also, freezes nicely.
SERVING OPTIONS
Here are the different ways I had this oatmeal bake.

Top with a tablespoon of plain Greek yogurt and fresh strawberries and sprinkle of cinnamon.

Sliced bananas, (this is a banana from Madeira Island and they are so good), fresh blueberries, yogurt and chopped Medjool date.

Portugal Food Guide - Where to Eat in Caldas da Rainha

I just returned from my fourth visit to Caldas da Rainha so I thought I put a post together on the best places to eat.  These are in no particular order.

A Casa do Bingre
I've been to this restaurant twice and actually had the same thing both times (when it's a good burger, just go with it) - the mushroom burger with caramelized onion, mushroom, spinach and cheddar cheese.

Sabores d’Itália
​Located in the town center, the Sabores d’Itália celebrates italian cooking, complemented by several other dishes of Portuguese origin.

This was my first time eating at a Michelin starred restaurant and one of my favorite restaurant meals of 2022.

For the starter, I had Melon With Parma Ham And Mint Mayonnaise and for the main course, Breast Of Duck With Port Sauce And Clementines.

I've been to this cafe several times, but when I was there in January 2023, my friends and I discovered that they have a restaurant area as well with different food choices.
From the Cafe...
A shrimp sandwich on Madeira bread with pickled onions.  I've had this a couple of times and it is so yummy.  I even created my own version at home.

They also have yummy salmon bowl (left) and chicken bowl (right).

This was one of their daily specials.  The filling for the sandwich was spinach, carrots and salmon in a creamy sauce.  It was delicious.  I'm definitely going to have to try to recreate something similar.

I went another day for lunch and just had a starter - the sticky and sweet (ribs with cucumber noodles and pickled apples).  It was quite filling.

Flavours of India
Flavours of India is a small, very discreet restaurant (there's no outdoor sign).  I don't even think there's a printed menu because the owner told me what was on the menu.
I had the Butter Chicken (one of my favorite Indian dishes) and it was probably the best I've ever had.
